Autolyse og blanding<br \/><span style=\"font-size: 16px;\">R\u00f8r vand og surdej sammen i en sk\u00e5l, til surdejen er opl\u00f8st. Tils\u00e6t melet og r\u00f8r rundt, indtil alt melet er v\u00e5dt. Lad dejen hvile i <\/span><b style=\"font-size: 16px;\" data-path-to-node=\"7\" data-index-in-node=\"132\">30-45 minutter<\/b><span style=\"font-size: 16px;\">. Dette starter glutenudviklingen naturligt.<\/span><\/h3><h3 data-path-to-node=\"8\">2. Salt og \u00e6ltning<br \/><span style=\"font-size: 16px;\">Tils\u00e6t saltet. Hvis du bruger en r\u00f8remaskine, skal dejen \u00e6ltes ved medium hastighed, indtil den slipper sk\u00e5lens sider og best\u00e5r &#8220;glutentesten&#8221; (hvor du kan str\u00e6kke en lille klump dej s\u00e5 tyndt, at du kan se lys igennem uden at den kn\u00e6kker).<\/span><\/h3><h3 data-path-to-node=\"10\">3. Bulk-h\u00e6vning og &#8220;Stretch and Fold&#8221;<br \/><span style=\"font-size: 16px;\">H\u00e6ld dejen over i en smurt plastb\u00f8tte. Over de n\u00e6ste <\/span><b style=\"font-size: 16px;\" data-path-to-node=\"11\" data-index-in-node=\"53\">2-3 timer<\/b><span style=\"font-size: 16px;\"> skal du give dejen 3-4 runder &#8220;stretch and fold&#8221; med 30 minutters mellemrum. Fugt h\u00e6nderne, tag fat under dejen, l\u00f8ft den op og fold den ind over sig selv. Det opbygger styrke i dejen.<\/span><\/h3><h3 data-path-to-node=\"12\">4. Koldh\u00e6vning<br \/><span style=\"font-size: 16px;\">Lad dejen st\u00e5 ved stuetemperatur, indtil den er vokset med ca. 30-50% i volumen og har sm\u00e5 bobler p\u00e5 overfladen. S\u00e6t derefter b\u00f8tten i k\u00f8leskabet i <\/span><b style=\"font-size: 16px;\" data-path-to-node=\"13\" data-index-in-node=\"148\">12-24 timer<\/b><span style=\"font-size: 16px;\">. Den kolde temperatur udvikler smagen og g\u00f8r dejen nemmere at h\u00e5ndtere.<\/span><\/h3><h3 data-path-to-node=\"14\">5. Bagning<br \/><span style=\"font-size: 16px;\">Varm ovnen op til <\/span><b style=\"font-size: 16px;\" data-path-to-node=\"15,0,0\" data-index-in-node=\"18\">250\u00b0C<\/b><span style=\"font-size: 16px;\"> med en bagesten eller en bageplade indeni.<br \/><\/span><span style=\"font-size: 16px;\">Vend forsigtigt dejen ud p\u00e5 et meldrysset bord. Pas p\u00e5 ikke at sl\u00e5 luften ud af den.<br \/><\/span><span style=\"font-size: 16px;\">Hug dejen ud til boller med en dejskraber og l\u00f8ft dem direkte over p\u00e5 bagepapir.<br \/><\/span><span style=\"font-size: 16px;\">Bag bollerne i <\/span><b style=\"font-size: 16px;\" data-path-to-node=\"15,3,0\" data-index-in-node=\"15\">12-15 minutter<\/b><span style=\"font-size: 16px;\">. Brug gerne damp i de f\u00f8rste 5 minutter (f.eks. ved at smide en halv kop vand ind i bunden af ovnen) for at f\u00e5 den bedste skorpe.<\/span><\/h3><hr data-path-to-node=\"16\" \/><h3 data-path-to-node=\"17\">Tips til succes<\/h3><p data-path-to-node=\"18,0,0\"><b data-path-to-node=\"18,0,0\" data-index-in-node=\"0\">Temperaturen betyder alt:<\/b> Hvis dit k\u00f8kken er koldt, tager h\u00e6vningen l\u00e6ngere tid. Kig p\u00e5 dejen frem for uret.<br \/><b data-path-to-node=\"18,1,0\" data-index-in-node=\"0\">Vandprocenten:<\/b> Denne opskrift har en hydrering p\u00e5 ca. 80%.
